High tech from tip to handle, Global knives from Japan designed a sensation after they burst on the world's culinary stage as an alternate to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" which has a long taper in lieu of a short bevel so edges remain sharp more than the best high-carbon stainless-steel knives. Edges are ground at the more acute `ngle than traditional European-style knives and arrive in the factory razor-sharp. Thinner blades bring about lighter knives.
